When the boys moved out to their own place the beginning of 2019, it was hard to scale the meals down to fit 2 people. I come from a family of 9 and was the primary chef while I was still at home. Then after we got married, it was not long before our family started growing. For the past 20 yrs. I have been cooking for 4 and kinda got into a rut.
Soon after they moved out, when I was still in the cooking for 4 stage, the boys would get a phone call from me, asking them to swing by for a meal because I had made too much, yet again. Slowly over the following months, I learned to scale back on the grub load and had finally gotten to the point where I was having fun planning and cooking for 2.
Then…. I lost my job.
With my income contribution to the household cut to less than a third of what my weekly paycheck was, I had to do some serious revamping of our budget. No more eating out 4 times a month. That was nixed altogether. I mean, who likes to cook all the time? It was nice those 4 times to not have to worry about cleaning up the kitchen, not have to clean the dishes, just go relax and enjoy the time with my husband.
This past week, since the layoff, I have been cleaning house (another blog post) and trying to get a list of supplies we have on hand, so I can go to the grocer 2 times a month and get everything we need for the 2-week period. I made a promise to myself. If I miss something off the list, and it is not a matter of life or death, it was going to have to wait till the next shopping trip.
Only had 2 trips a month
That is were the planning comes in. Knowing I only had 2 trips a month to get everything we need, I got really good at planning out our meals for the next two weeks. I will only get the supplies I need to make those specific meals. Nothing extra. That way everything was rotated and used within the used by date. And it prevented unnecessary spending. It’s about the important things in life, after all!!

Some of the recipes I have are for larger gatherings. What I will do, is make the complete recipe, but then freeze or can the leftovers for later in the month. I am cooking anyway why not make some for later, when I really don’t feel like cooking. That also helped cut down the grocery bill, big time.
Now of course, it is not possible to keep fresh fruits and fresh veggies longer than about 5-6 days on the countertop, (last about 7-8 days in frig). For the first week after the shopping trip, we will eat on the fresh foods and keep the frozen and canned foods for the 2nd week. So, we are still getting our fresh fruits and veggies.
Lists for everything
I am the type of person to write things down and not rely very heavily on electronics to make lists and such. I am a visual person and like to keep lists of tasks that need to be done monthly, weekly and yearly lists of groceries, etc. So…I am a LIST person. Below is the grocery list that I use to go get the groceries for a 2-week period. I check off what I need. Stuff I don’t need does not get a check mark. I get this list from https://www.freeprintablegrocerylist.com/ They have all types of lists to use for grocery shopping. I use this one, because it has everything you could think of and then some.
